Chicken Shawarma
For the chicken… In a grinder grind together 3 Kashmiri red chillies , 6-8 cloves of garlic , juice of 1 big or 2 small limes , 6 tbsp of regular oil , 6 tbsp of olive oil and salt to taste . Grind to a paste and apply to 500 gms of chicken cut into thin slabs .
Let marinate for an hour and grill in oven till done . Heat few pcs of coal and grill the chicken on direct flame for few sec to give charred effect. Then cut the chicken into thin slices and mix in the oil and marinade remaining after grilling the chicken.
For the pickled veg … cut thin fingers of carrot , cucumber , beetroot , and slices of fat green chilli (jalapenos ) in 1 glass of water mixed with 1 cup vinager and salt to taste . Boil for few mins till the colour changes and veg turn slightly soft. (boil the beetroot separately after removing other veg or it will spoil the colour of the other veg )
For the chilli lovers boil whole spicy green chillies in the vinager water to serve along with the shawarma
For the garlic sauce … mix 1 cup dahi with 1 cup mayo and 1 tbsp chopped garlic and salt to taste .(sometimes what I do is add one small boiled and mashed potato to the sauce and grind with hand blender this gives a really nice thick texture to the sauce)
Follow my pita bread recipe or use ready pita bread . You can also make with shahi paratha . My fave is with homemade pita bread.
For the assembling.. heat pita bread with slight butter on a tava just b4 making .on a pita bread put some sliced cabbage in a line , followed by chicken pcs (heat the cut chicken pcs on the stove b4 making) , then pickled veg , jalapeno , sliced olives and then the garlic sauce (I sometimes also add a few pcs of French fries) roll and wrap in foil or butter paper if needed . serve hot with some pickled veg , pickled chillies and extra garlic sauce
Ps . To make the Turkish version of the shawarma follow the same recipe … instead of pita bread make big and thin maida rotis and roll the shawarma first by folding from the sides and then roll from front . Now on a grill pan drizzle some olive oil and grill the shawarma till golden.
