Chicken Seekh Paratha With Red Chutney And Raita

Being brought up in Dubai , chicken tikka inn had always been a to go place . Missing Dubai and the food there , I tried recreating my fave menu from chicken tikka inn . To be honest I did not go anywhere close to the original taste but what I made surely turned out really delicious so surely u guys should try it out .

Firstly marinate 500 gm chicken cubes with salt . Juice of half lime , 1tsp garlic paste , half tsp ginger paste , 1 roughly chopped onion, 3-4 green chilli chopped , 1 tsp red chilli flakes, 2 tsp red chilli powder, 1 tsp Dhanya powder, half tsp zeera powder, 1 tsp garam masala powder, half tsp black pepper powder, half tsp haldi powder, and some chopped coriander . Mix and blend in small portions to a fine mince and do koyla dhungaar and let marinate for 2 hrs.

Then shape seekh and grill on pan with little oil till done .

To make raita simply mix half cup dahi , salt , half tsp chaat masala, 2 pinch black pepper and 2 pinch zeera powder.

To make chutney blend together , v little Kothmir n Phudina , 2 green chilli , 3 tbsp imli , 1 tbsp red chilli flakes, salt , 2 tbsp sugar , half tsp zeera powder, half tsp chaat masala powder and 1 tsp red chilli powder. Blend to a fine paste then dilute with water .

To make paratha – knead together 1 cup gehu aata , 1 cup Maida , 3 tbsp rava with salt and enough water to make a medium soft dough, last knead in 3 tbsp oil and let the dough rest for half hour . Then roll thick rotis and deep fry till golden and crisp .

Serve seekh paratha with the raita and chutney along with some sliced onion and mint . Enjoy.
