Chicken Salad (Delhi Darbar Wedding Menu Style)
Did not get enough time to take step pictures or serve in a presentable plate as made it for iftar, but this turns out super yumm
Firstly marinate 200 gm chicken slices with salt , juice of half lime , half tsp black pepper powder , half tsp oregano and half tsp garlic powder. Let marinate for half hour and grill till done . Then cut into strips and keep aside. ( simply skip the chicken step to make veg salad which is also v delicious)
In a bowl mix together half cup mayonnaise, half tsp red chilli powder, 1 tsp chopped green olive (skip if u don’t have ), 2 tbsp tomato ketchup, salt and little water . Mix well and keep aside . ( you can also follow my ranch dressing recipe from my website to make the white version , or use your choice of ready mayo dressing)
In a big bowl mix a large roughly diced iceberg lettuce, 2 large chopped tomatoes , 1 small chopped onions and very little chopped coriander ( all your veggies should be in small dices, not too big not too small ) you can also add sliced olives and diced pineapple, I did not have at that time so I skipped .
Now mix in little salt , 1/2 tsp black pepper powder, 2 tbsp olive oil, juice of half lime , and the sliced grilled chicken and mix well . ( if you wish u can mix the salad dressing or drizzle the salad dressing on top while serving )
Now serve the salad in a plate and sprinkle some fried pita bread squares or fried samosa sheet squares . Drizzle the salad dressing if you have not mixed it already with the salad and serve immediately
You can prepare the salad beforehand and keep but sprinkle the fried pita or samosa sheet just before serving or it will become soggy.
