Chicken / Raan Khepsa Rice

Take one whole chicken and butterfly cut it.( or 1 small 1.5 kg raan ) Wash well and make slits. Apply juice of 2 limes ,salt ,1tsp ginger paste , 1tsp garlic  paste , 4 tbsp tandoori masala powder ,1 tsp garam masala powder. Let this marinate for few hrs then remove all excess masala and grill in the oven till done ( for raan simply pressure cook it) . Grill the chicken /raan on direct flame with few pcs of coal to give charred effect. Keep the chicken aside.
To prepare the masala in a blender grind together 4 whole Kashmiri red chilli , 1 cup tomato sauce, 2 tbsp soya sauce, 4 tbsp chilli sauce , 1 tbsp vinager, 2 tbsp Worcestershire sauce , 1 tbsp sugar , salt , 1 tsp white pepper , 2 tbsp shezwan sauce. Blend all together to a fine paste. Now in  a vessel put oil and 1 sliced onion and fry till slight golden, add 1 tbsp chopped garlic , half tbsp chopped ginger and 2 chopped green chillies, saute and add the prepared paste and a pinch of red colour, also add the excess masala of the chicken and cook well . Add half sliced onion and capcicum and lastly mix in some chopped spring onion. Your gravy is ready.
For the rice , boil 2 cups of rice till almost done and drain. Now in a kadhai put oil 1 chopped capcicum , barista of 1 big onion , half packet of shaan bombay biryani masala ,and lots of chopped coriander and mint. Saute for a min and add this mix to the rice and mix well and put on dum.
For serving in a thaal spread the rice , in the centre put the chicken / raan and pour the gravy on the chicken, sprinkle some chopped spring onion and coriander on this. On the border of the thaal decorate with sliced cucumber, carrot, tomato and egg. Sprinkle some sliced cabbage and Serve hot and be ready to be asked which restaurant you have ordered from😋
