Chicken / Mutton Laziza

As the name suggests  , this is one lazeez recipe u all will love in sha Allah. ( again it’s my own innovation  and may not match any restaurant  gravy with the same name)
Firstly  marinate  750 gms of chicken ( I’ve used boneless  leg) or mutton with , salt, juice of 1 lime , 1 tsp red chilli flakes,  1 tsp black pepper powder and let marinate  for 2 hrs.
Blend together  barista of 3 large onions , a fist of fried kaju( just fry till golden and remove) , some chopped  coriander  , 4 tomatoes , 6 green chillies, a cup of dahi  and to a fine paste .

Heat  oil in a kadhai ( or pressure  cooker if using mutton) add a few curry leaves , whole garam masala and let it splutter , add the marinated meat and fry on high heat for 5 mins or till colour changes and add 1 tbsp ginger paste , 2 tbsp garlic paste and saute for 2 more mins ( pressure  cook mutton till done after this step )
Add the prepared paste , salt and 1 tsp red chilli powder,  half tsp haldi powder,  1 tsp garam masala powder , a pinch of red colour ( optional)and cook well . And sprinkle lots of chopped  coriander on top( dont mix)
In another pan heat some oil and butter or ghee , add 1 tbsp kasoori methi and heat it well , switch off the heat and mix 1 tsp red chilli  powder and pour the oil on top of the gravy . Cook for 5 more mins and serve hot with butter garlic naan or chapati or paratha.
