Chicken / Mutton Biryani

Hey guys i have recieved alot of requests for posting biryani recipe . I usually use shaan masalas like sindhi biryani , memoni mutton, pulao biryani , malay chicken biryani , Bombay biryani etc to make biryani . Here im sharing the kind i mostly make and the fave among family.

Firstly make barista of 5 onions and keep aside .
In the same oil fry potatoes and keep aside

Make barista mix…Take 2 fist of this barista and mix 1 handfull each of chopped kothmir and phudina . Keep this aside .

In grinder jug put the remaining barista , 3 tomatoes , 250 gm dahi , 2 tbsp garlic paste , 1 tbsp ginger paste , 1-2 green chilli , half tsp haldi , half tsp zeera powder , 1.5 tsp dhanya powder , 2 tsp garam masala powder( plz use my recipe garam masala for all my recipes , if not using then add half the quantity) 1.5 tsp red chilli powder . Grind all this well to a fine paste.
Heat some oil in a vessel and add whole garam masala , add the prepared paste , salt and 3 tbsp shaan sindhi biryani masala . Saute well and add 1 kg of meat , cook till done . Add juice of half lime and some chopped coriander and mix . Add enough water to get a medium thick gravy , this helps create nice layer of masala , if u keep the gravy very thick the rice wont absorb it well , if u keep it very thin then the gravy will boil over the white rice as well.

Boil 2.5 cup basmati rice with some whole garam masala and salt and 3 tbsp oil till 3/4th done . ( in the pic above i have used kolam rice as few members of my family dont like basmati)
Take a big vessel and spread a thin layer of rice , pour the gravy , spread the fried potatoes, , sprinkle half barista mix and spread the remaining rice , sprinkle the remaining barista mix and drizzle a few spoons of ghee . Sprinkle yellow colour (i dont mix it with water i add the powder directly) and sprinkle half cup of warm milk soaked with a pinch of saffron.
Keep on tava and Cover and cook on high heat for 15 min . And low heat for half hour. Serve hot with dahi kachumber.
