Chicken Madhbi

A must try recipe this Eid and otherwise.

In a grinder jug put 2 inch dalchini , 1 tbsp whole zeera , 1 tbsp whole Dhanya , 5 elaichi , 4 laung, 1 tsp whole black pepper , 1 tsp oregano, 1 tsp mix herbs , 1 tbsp red chilli powder, half tsp haldi . Blend all to powder . Then add 6 green chilli , half roughly diced onion , 1 roughly chopped tomato , 15-20 garlic cloves , 1 inch sliced ginger , and juice of 2 lime . Blend to a fine paste .

Take 2 small whole chicken ( total of 1.5 -2kg ) cut each chicken into half and then open and make slits as shown in video ( you can also use smaller pcs if you like ) apply half the prepared paste and salt on the chicken do coal dhungaar and let marinate for 2 hours . Then apply little oil and grill in oven or pan till done .

To the remaining paste add 2 roughly chopped tomatoes and grind to paste .

For the rice in a vessel heat oil , put 2 tej patta , 1 black lemon , 2 small chopped onions and fry till soft. Add 2 chicken stock cubes , sauté and add the paste and little water and salt and cook well . Add 6 cups water and cover and bring to boil . Then add 1 kg of washed and soaked basmati rice . Stir and cover and cook on high heat till water dries . Stir with light hands and drizzle 1/4th cup warm water mixed with a pinch of saffron and little red color . Cover and keep on dum for 5-7 mins . Stir with light hands and keep grilled chicken on top also pour and little juices from the chicken that are left in the pan or oven tray and do coal dhungaar . Keep on dum for 5-7 more minutes and remove chicken and give a final stir with light hands .

Serve hot along with salata harra ( tomato chutney)

In a chopper , Chopperise together 4 roughly chopped tomatoes , half onion , 2 fat green chillies , very little chopped coriander, 2-3 garlic cloves , juice of 1 lime and salt to taste . Chopperise well and serve along with the madhbi.
