Chicken Hot Shots
One of my own creations that has been loved by all alhamdolillah .
Firstly marinate 500 gms of chicken strips with salt 1 tsp white pepper, juice of 1 lime , and 1 tsp garlic paste and 1 egg .
In a bowl mix half cup maida , 2 tbsp corn flour , pinch of salt and pepper , half tsp oregano.
In a grinder blend together 3 kashmiri red chillies , 2 tbsp yogurt , 4 tbsp red chilli sauce , 2 tbsp green chilli sauce , half tsp red chilli powder, 4 tbsp tomato ketchup , 1 tsp sugar , half tsp white pepper powder , 1 tsp vinegar , pinch of red colour , 2 tbsp siracha sauce. Blend into a fine paste .
In a kadhai heat some oil, add a few slit green chillies , few curry leaves , 2 tsp chopped garlic , saute for a minute and add the prepared paste and 4-6 tbsp water and salt , cook for a minute and switch off heat.
Now coat each strip of chicken with the flour mix and fry till light golden.
Fry and toss the chicken in the sauce just b4 serving ( to toss the chicken reheat the sauce add a splash of water if needed and toss the chicken till well coated) , lastly mix in some chopped coriander.
Serve hot.
