Chicken Frankie
Below I’m giving recipe which is enough for around 15 frankies.
Firstly pressure cook 500 gm boneless chicken with salt , 1 tsp garlic paste and half tsp ginger paste . Cover and cook on high heat till first whistle and low heat for 5 min ( chicken will release its own water . We don’t need to add water . The stock that we will get will be used later ) shred the chicken and keep Aside .
In a Kadhai heat some oil and put half tsp whole zeera , 2 chopped green chillies , 1 big finely chopped onion and salt . Sauté really well till almost golden . Add 1 tsp each of ginger garlic paste and sauté well till fragrant .
Then add paste of 3 tomatoes and saute , add 2 tbsp of tandoori masala , 2 tsp red chilli powder ,1 tsp garam masala powder , half tsp zeera powder , half tsp black pepper powder and salt to taste . Sauté well and add 4-5 tbsp tomato ketchup, 3 tbsp red chilli sauce , 1 tsp vinegar . Sauté and add the stock from the chicken and cook really well so that no raw smell remains . Then add the shredded chicken and cook more till almost dry .lastly add lots of chopped coriander . Cook for two mins and turn off heat .
For the roti I have simply made chapati like dough with 1.5 cup maida and 1.5 cup gehu aata and salt ( some people prefer only maida aata for frankie roti . But I like to mix gehu, you can do as per your liking) . Make like regular chapatis just cook it slightly less as it will be cooked more with egg later . Make all the chapatis and keep aside .
Now beat 4-5 eggs with little salt and pepper and 3-4 tbsp milk .
In a pan put 1 tsp oil , then put 1 big spoon full of beaten egg ( you can put more or less as per your liking ) then slightly spread it and put on chapati on it . Press and cook well till the egg is nicely cooked . Also turn and cook little on the back side.
Remove in a plate and put some chicken fillin gin the centre, top it with some chopped onion, some chopped coriander, and a generous sprinkle of chaat masala and amchur powder. ( you can also put some sliced green chilli on this if you are a spice lover )
Simply roll it and serve hot.
