Chicken Caterpillar
Basically Caterpillar is just the shape of folding the bread u can also make simple buns or use your fave folding method with this filling.
For the dough , knead together 2 cups maida , 1 tbsp sugar, 1 tbsp yeast , salt and knead with lukewarm water , lastly apply some oil and cover and keep aside for 2 hours or till it doubles in size.
Marinate 250 grams of chicken cubes with salt, 1 tbsp garlic paste , 1 tsp ginger paste , 2 tbsp tandoori masala , 1 tsp red chilli powder , half tsp red chilli flakes , 1 tsp oregano ,and juice of half lime. Keep aside for half hour.
In a kadhai heat little oil , saute 1 big onion chopped till colour changes slightly, add salt ,half chopped capsicum and saute for a min , add 1 big chopped tomato and saute till soft. Add 6 tbsp tomato ketchup , 4 tbsp red chilli sauce , 2 tsp green chilli sauce , 1 tbsp soya sauce , 2 tbsp Worcestershire sauce , saute little and add the marinated chicken , and cook till the chicken is tender , add a fist of boiled corn and half capsicum chopped , switch off heat and let cool, mix in 6 tbsp mayonnaise , some grated cheese and lots of chopped coriander.
To make Caterpillar shape .. take a ball of dough and roll into a round shape, put a tbsp full of filling in a line , cut strips from the front , start rolling from top to bottom. Give the oblong shape a slight curve and place on a greased oven tray , brush egg on top and sprinkle some kalonji and white til . Bake in a preheated oven at 180 degrees for about 20 min or till golden
Serve hot with ketchup or chutney.
