Cheezy Chicken Seekh
Take 500 gms of boneless chicken cubes and marinate it with 2 tbsp chopped garlic , half tbsp chopped ginger , 5-6green chillies chopped , a fist of chopped coriander and mint , juice of 1 lime , 1 tbsp butter , 4 slices of bread broken to pcs , 1 tsp garam masala powder, 2 tbsp cream and salt to taste .mix well and grind to fine kheema in the grinder.(grind in small batches so that no whole chciken remains) keep the prepared kheema in the fridge .
To prepare the cheese :- in a bowl grate 200 gms of processed cheese and put 1 tbsp butter and half cup of milk. Heat the bowl in the microwave for 30 second intervals till the cheese melts.(if you do not have micro then use double boiler method) once the cheese is melted grind it with a hand blender and pour in a tray . Chill in the freezer till it sets.and cut it into fingers.
For assembling:- oil your hands and flatten the kheema in your palms . Place a stick of the prepared cheese in the centre and roll the seekh. (Make sure u take a medium quantity of kheema , if you use too much then it won’t be much cheezy and if you use less and any gap remains , then the cheese will ooze out on frying.) Coat all the seekh with bread crumbs and freeze. Dip in egg and fry on medium heat right before serving . Serve hot with mayo or shezwan sauce or green chutney.
