Burnt Garlic Chicken / Fish / Prawn Chilli

Marinate 500 gm chicken cube or strips with , salt , 1 tsp white pepper powder , 2 tbsp chilli sauce , 1 tbsp soya sauce , 1 tsp garlic paste , 1 tbsp vinager , 1 egg , 3 tbsp maida , 1.5 tbsp corn flour. Marinate and deep fry and keep aside.
In a wok heat oil add 4-5 cloves of garlic sliced and 4-5 Kashmiri red chillies broken to pcs. Fry till the garlic turns golden . Add 2 tbsp chopped garlic , 1tsp chopped ginger , 1tsp chopped green chilli and 1 small chopped onion , saute for a min and add , 2 tbsp oyster sauce , 3 tbsp soya sauce , 2 tsp vinager , 3 tbsp chilli sauce , 1 tsp white pepper powder , 1 tbsp sugar and salt to taste . Add corn flour slurry ( if making dry chilli use 1 tsp cornflour with half cup water , if making gravy use 2 tbsp with 1 glass water) , cook well and add 1 capcicum cubed, 1 small onion cubed , 3-4 green chillies slit and a fist of chopped spring onion . Cook and mix the fried chicken . Cook for few mins and add Little water if required. Lastly mix in some more chopped spring onion . And serve hot with burnt chilli rice/noodles or tandoori roti.
