Bihari Malai Boti Roll

For paratha mix
In a bowl mix 1 cup milk , 1 egg , 1 tbsp sugar , salt , 1/4th cup oil and 1/4th tsp baking soda . Mix well and then mix 1 cup Maida , 1 cup aata and knead to a soft dough. Cover and keep aside for an hour and then roll into a fat roti and shallow fry on high heat till light golden.

For chicken /mutton Bihari malai boti
Marinate 500 gm meat with salt, 1 tbsp each ginger ,garlic, green chilli paste , juice of 1 lime ,salt , 1 tsp black pepper powder, 1 tsp red chilli flakes ,1 tsp Dhanya powder, half tsp zeera powder, half tsp garam masala powder, 1 tsp mustard oil , 2 tbsp regular oil , half cup dahi , 1/4th cup cream or malai . Mix well and let marinate for an hour . Then cook till done and dry .

For chutney – first blend together 2 tbsp imli , salt , 1 inch pc of jaggery , 1 tbsp sugar to paste with little water . Then add in 1 small roughly chopped onion , 4-5 green chilli , a handful of coriander and mint , 1 tsp chaat masala , half cup dahi and half cup mayo . Blend everything to a fine paste and use as needed .

To assemble
Take a fried paratha and put sliced onions , tikka pcs , lots of chutney and wrap . Serve immediately. Enjoy . And get ready for compliments.
