Big Baik Sandwich
This is my recreation of the v delicious big baik sandwich from al baik saudi . The fillet used in original big baik is made with fillets joint together , frozen and cut in a machine commercially. Which is v difficult to do at home . So heres my own twist to the sandwich . And u guys r gonna loveeeeeeeee it. In sha Allah
For cocktail sauce, mix together half cup mayo , 2 tbsp cream, 4 tbsp tomato ketchup , 4 tbsp red chilli sauce, half tsp vinager , 1 tsp red chilli powder , half tsp garlic powder, little salt and a dash of water . Mix well n keep aside .
For the pattie, mix together 500 gms of boneless chicken , 3 slices of bread, salt n half tsp black pepper powder. Grind in small batches to a fine mince.
Make rectangular patties and keep on a greased tray. Freeze for 3-4 hrs or till rock solid.
In a bowl mix together 6 tbsp maida , 3 tbsp corn flour , 2 tbsp red chilli sauce , 2 tbsp green chilli sauce, 1 tsp red chilli powder, 1 tsp garlic powder, 1 tsp black pepper powder, salt , 1 tsp red chilli flakes and half tsp haldi powder . Add enough water to make a medium consistency paste .
Now coat the pattie with dry maida and then dip the frozen chicken pattie in the batter and coat with fresh bread crumbs or panko. Deep fry till golden .
Now trim the edges of a hotdog bun and slice it ( this is to give the al baik bread effect, you can use the chopped edges to make bread crumbs, or u can skip this step)
Slice the bun and put some cheese slice and melt in the micro or on tava . Put some pickled cucumber or gherkin ( ive simply boiled cucumber slices in vinegar , water n salt mix) now put the fried pattie on top , followed by some cocktail sauce then sliced purple and green cabbage , jalapenos, and sliced olives . Cover with the top of the bun and serve hot along with some fries.
