Baingan Aloo

In  a kadhai heat oil add half tsp whole zeera , let it crackle and add 1 small onion chopped , saute for a min , then add 1 cup small baingan diced and 1 cup potato diced .lower the heat and cover your kadhai , when the veg is half cooked add 2 chopped tomatoes ,1 tbsp garlic paste , salt , 1 tsp red chilli powder , half tsp haldi powder , 1 tsp dhanya powder , half tsp zeera powder ,Half tsp garam masala powder 1 tbsp kasoori methi , and 1 tbsp korma masala (I use gigani , if ur using shaan use half tbsp as it’s stronger comparatively) add very little water and cover and let cook till almost done. Lastly add 2 tbsp dahi and lots of chopped coriander. Serve hot with chapati.
