Anda Paratha

This is a really yummy breakfast recipe you can try for a change .
Knead 2 cups wheat flour or mix of maida and wheat with salt , water and little oil to make dough.

In  a big bowl mix 1 chopped onion , 3 chopped green chillies , some chopped coriander , some chopped spring onion (also add chopped hara lassan when it’s in season) 4 tbsp milk , salt and 1 tsp black pepper powder . Mix well and add 6 eggs and beat well. Keep aside.

To make paratha … roll a chapati and spread little oil , sprinkle little flour and fold in half , repeat the process and fold to a triangle . Now roll the triangle again to a paratha.

Roast the paratha till half done. Carefully open the paratha ( once you roast the paratha the layers will open on their own . Lift any one layer to open the paratha . I normally open on the  tava itself , but if ur a beginner plz remove in a plate and open to prevent your hands from burning) add 3-4  tbsp of the egg mix and close the paratha . Roast with ghee or oil till golden . Cut into pcs and serve hot with ketchup or hot sauce😋
