Ambade Ki Bhaji

This must be something new for a lot of u out there , but a fave for the Hyderabadis in the following. This is a naturally sour bhaji so if ur a person who likes that sourness in food , this is a must try for you , and you will repeatedly keep making this
. If you do not like sourness at all then Ambada is a bhaji u should skip trying .

Firstly clean a bundle of ambada bhaji and slice it and keep aside .
Soak a generous handful of chana dal and then boil it with little haldi till soft . Mash it slightly and keep aside

In a Kadhai put the bhaji , 12 slit green chillies ( take mild spiced ones , or if u have spicy then put 8 , this recipe calls for a lot of chillies to balance the sourness of the bhaji ) , 3 finely chopped tomatoes, 1 tsp garlic paste , half tsp ginger paste , half tsp haldi and mix well , cover and cook on medium high heat till soft , then add salt ( in this recipe you will need almost 2-3 times the salt u would put in any other bhaji ) , then add the boiled dal and cook well , also mash the Bhaji a little .cook well and then spread a generous amount of chopped coriander on top ( don’t mix )

For baghar take a mix of oil and 2-3 tbsp desi ghee , 1 tsp whole zeera 6-7 slit green chilli ( spicy) 3-4 dry red chillies broken to pcs , 7-8 cloves of garlic sliced , half tsp hing . Cook till the garlic is golden and pour on the chopped coriander. Mix well and cook for 5 more mins and serve hot with chapati

If you find it sour add more salt as this recipe needs a good amount of salt and chilli to balance the sourness.
