Aloo Ke Parathe
Boil and mash half kg of potatoes n keep aside .
To this mix salt , lemon juice, 1 chopped green chilli , 2 tsp chat masala , and lots of chopped coriander . Now make baghar , in a pan heat little oil and add 1 medium chopped onion , 2 chopped green chilli , 2 tsp kasoori methi , 1 tsp chilli flakes , few curry leaves sliced , 2-3 pinch rai , a pinch of heeng ,quarter tsp ajwain , half tsp saunf and half tsp haldi ,cook till the onion turns light golden and pour the baghar on the potatoes and mix well .
For the dough simply knead wheat flour with little salt a pinch of baking soda , lukewarm water and little oil . Make parathas and fry till golden serve hot with plain yogurt , raita or Punjabi chutney .
I usually make raita with yogurt , salt and little dukka masala ( I get it from Saudi … you can substitute it with zeera powder)
