Almond Roca Chocolate

In a vessel put 1 cup of sugar and 4 tbsp water , switch on heat on low and let the sugar melt and turn golden . Do not use a spoon to stir . Just keep moving the vessel . As soon as the sugar starts turning golden switch off heat and immediately add 1 tbsp butter and 1 tsp baking soda . Mix fast with a wooden spoon and add 100gmchopped roasted almonds … Mix well and transfer to a greased tray and spread into a thick layer . Let it cool and harden. Once hard , roughly break the roca into small pcs and dip in melted chocolate with a fork and keep aside in another tray till chocolate sets. … store in an airtight container .. ( tip… be carefull while making the roca , you have to be really fast with the process as soon as the sugar starts caramelizing and also very carefull as the temperature of sugar is very hot)
