Dajaj Harra Roll / Spicy Chicken Roll
Harra here isn’t green .. it means spicy in Arabic . Dajaj harra translates to spicy chicken . Given my twist to this dish I had eaten at a small eatery.
To make the chicken harra … marinate 500 gms of very thin fingers of chicken with 1 egg, salt , 1 tsp white pepper powder, 1 tbsp garlic paste , half tbsp ginger paste ,1 tsp green chilli paste, 2 tsp red chilli powder , 1 tsp garam masala powder , 2 tbsp red chilli sauce , 1 tbsp shezwan sauce , juice of 1 lime , a pinch of red colour . Let marinate till half hour then mix in 2 tbsp corn flour , 2 tbsp rice flour , 2 tbsp chana aata , and 2 tbsp maida and some chopped coriander . If the batter is very dry add slight water to coat the chicken well . Fry little at a time till crisp and toss some chaat masala.
For the sauce … In half cup of mayo mix half cup dahi , 1 tbsp chopped garlic and salt to taste.
To prepare the roll take a pita bread and slightly roast it on direct flame and put some chicken in a line followed by some finely sliced cabbage , few slices of pickled jalapenos and few slices of olive (to make pickled jalapenos you can just slice fat chilles and cook in a mix of 1 cup water and 6 tbsp vinager . You can store them in a glass jar for months) finally drizzle some sauce and roll . serve hot along with French fries or wafers.
