Nihari

In a pressure cooker put oil , 2 tbsp ginger paste, 2 tbsp garlic paste , saute well and add 4 tbsp shaan nihari masala , a fist of chopped coriander and mint , saute and add 1 kg of mutton , cook on high heat and keep stirring for 5 min .
Add 2 glasses of water and pressure cook till done.
In a tava roast 5 tbsp wheat flour on low heat till the colour changes slightly. Let cool and remove in a bowl . Mix 1 glass of water to make slurry.
Add the slurry to the meat and cook till thick add Little salt as the packet already has salt.
Add barista of 3 medium onions roughly crushed with hands , a fist of coriander and mint , juice of 2 limes , 2 inch ginger finely Julienned . Cook for 5 min and add about a cup of hot oil in which you made barista . Sprinkle coriander ,mint and barista on top . Serve hot with tandoori roti.
