Dal Gosht/Chicken

In a bowl put 3/4 th cup toor dal , 1/4 cup masoor dal and 1 tbsp chana dal (this proportion is exact opposite of what many people make but you’ll love it once u try) wash and soak the dal.
In  a pressure cooker ( use a large one as this is a one pot recipe you do not need another vessel ). Put the soaked dal along with 3 chopped tomatoes , 1 small onion chopped , fist of coriander , 5-6 green chillies , 1 tsp haldi , 1 tsp dhanya , 1 tsp whole zeera , 1tsp garam masala powder, 2 tbsp garlic paste , 1 tbsp ginger paste and a glass of water . Close the cooker and cook on high heat for 1 whistle then low heat for 5 min , when done blend the dal to paste . In the dal put whole garam masala , salt and 1kg  of mutton and a fist of whole ambosi (dried mango) pressure cook till almost done ( if making chicken add the  1kg chicken along with 500 gm doodhi together and cook till done) . Add 500gm  doodhi to the cooked mutton dal and cook till done. Mix in juice of 1 lime and put lots of chopped coriander on top (don’t mix ,you have to pour baghar on this)
To make baghar in a small pan take oil with 1 tbsp ghee and 10 cloves sliced garlic , 2-3 slit green chillies , very little sliced onion , few curry leaves,  1 tsp zeera , 1tbsp Kasoori methi and half tsp of hing . Fry till the garlic turns golden and switch off heat . Add 1 tsp red chilli powder and pour on top of the dal.
Cook the dal for 2 more mins and serve hot with zeera rice or tandoori roti or kadak paw or naan ( I bet your mouths watering at this stage😂) don’t forget to squeeze some extra lime in your plate😋.
