Pathani Tangdi

Guyssss this creation of mine deserves to go viral . Surely a Dawat dish .

Firstly in a big bowl mix salt , 1 tbsp each of ginger garlic and green chilli paste , half tsp haldi, 1 tsp white pepper powder , half tsp black pepper powder , 1 tsp elaichi powder, 1 tsp Dhanya powder , 1 tsp zeera powder , 1 tsp garam masala powder , 1 tbsp kasuri methi, half cup dahi, and 1 big onion barista crushed , mix well and mix in 1 kg drums or your choice of chicken pcs and do coal Dhungaar , let marinate for 24 hours or at least overnight for best taste .

Cover and cook the chicken till done . Then remove lid and cook on high heat to dry excess water and till masala is thick .

Pick each pc of chicken and char it on direct flame over a few pcs of coal .

In the remaining masala mix , paste of a handful of kaju and 1/4th cup milk , half tsp white pepper powder , 200 mL cream , 100 gm grated processed cheese and yellow color . Mix well .

To assemble on. A pc of foil put the chicken pc , top with 2-3 tbsp sauce and garnish with grated cheese , red chilli flakes and some chopped coriander . Close nicely and prepare all the pcs the same way .

Just before serving cook the foil on direct flame 30-40 seconds on each side on medium heat .( you can also steam the entire batch on high heat for 4-5 min )
