Crispy Fried Garlic Potato Wedges

To make garlic mix … In  a bowl mix together 4tbsp corn flour , 2 tbsp makai aata , 2 tsp garlic powder,2 tsp chilli flakes, 1 tsp each of oregano, mixed herbs and parsley little chopped corriander and salt.
Take 1 kg medium sized potatoes and cut them into wedges and wash them 3-4 times(this helps remove the starch to make the wedges crispy … follow the same process when making fries) put these wedges in boling water with salt and cook for a min and strain. Toss the potatoes with the garlic mix and fry till crispy ( if you have time in hand then freeze the potatoes for few hrs after tossing the garlic mix.  Then half fry potatoes and keep . Fry till crispy right before serving . This process gives crispier wedges. Follow the same process when making fries… just toss with corn flour instead of garlic mix .. for making regular fries)
