Pineapple Chicken
Firstly marinate 250 gm boneless chicken cubes with salt, half tsp black pepper powder, 1 egg, 3 tbsp maid and 2 tbsp cornflour. Mix well and let marinate for half an hour then fry till golden brown. Keep aside.
In a Kadhai heat little oil add 1 tbsp chopped onion , 1 tbsp chopped garlic , 1 tsp chopped ginger , 2 chopped green chilli and sauté till fragrant. Add 1 cup water and add 2 tbsp red chilli sauce , 2 tbsp green chilli sauce , 2 tbsp soya sauce , 1 tsp vinegar , 1 tsp black pepper powder, salt to taste , 1 tbsp sugar . Mix well and add the fried chicken, 1 small diced onion and capsicum and 1 cup diced pineapple. Bring to boil and add slurry of 1 tsp cornflour mixed in 1/4th cup water. Cook well on high heat till dry . Lastly add some chopped coriander or spring onion and serve hot as a starter or you can even have with roti or fried rice.
