Restaurant Style Choley

Soak 250 gms choley overnight and keep aside.
In a cooker put the choley , a fist full of masoor dal ( this is the secret to the thick gravy at restaurants) 3-4 chopped tomatoes , 1 chopped onion , little coriander , half tsp haldi ,1tsp whole zeera , 2-3 chopped green chillies , salt to taste.cook on high heat till first whistle , then on low heat for 10 mins. Keep aside. In a kadhai heat oil and put little heeng, 1 tbsp garlic paste and saute.
Add the choley and cook . In  a bowl mix 200 gm yogurt , 1 tbsp choley masala , 2 tsp red chilli powder, 1 tsp chat masala , 2 tsp kasoori methi juice of half lime, salt n 1 tsp garam masala pwdr. Add this mix to the choley and cook till thick and dry . Add lots of coriander and serve hot with lime , sliced onions , achar and puri or bhature.
