Wedding Style Golden Fried Prawns With Shezwan Dip
Alhamdolillah my wedding starters class is being loved by sooo many of you . Here’s a wedding starter recipe for my wide Audience who r not able to attend my class .
Firstly apply salt and half tsp haldi on 500 gms jumbo prawns and keep for half hour and wash well . Make slits on the prawns to help prevent them from curving while frying .
Marinate with salt , half tsp black pepper powder and 1 tbsp soya sauce 1 tbsp red chilli sauce and let marinate for half hour .
In a bowl mix together half cup Maida , 2 heaped tbsp corn flour, salt and half tsp baking powder. Make batter by putting ice cold water and ice cubes ( the batter shouldn’t be v thin or v thick and ice water is v imp to get crisp texture) ( mix this just before frying )
Dip each prawn in batter and deep fry on medium heat till golden and crisp
To make shezwan dip, mix 4 tbsp tomato ketchup, 2 tbsp shezwan chutney, half cup water and half tbsp corn flour. cook till thick and glossy.
Serve hot in shot glasses as we get in weddings or simply in a plate.
