Al Baik Fish Burger/ Al Baik Fish Nuggets
All u seafood and fish burger and saudi albaik lovers , DO NOT MISS TRYING THIS.
the same recipe that has been followed for the burger fillet , can be followed with fish strips as well to make ditto albaik fish nuggets . For the ones who dont eat fish can make this recipe with chicken fillet or paneer as well.
Firstly cut 1kg boneless basa fish according to buger or nugget shape ( 1 kg basa makes 8 burgers or around 15 nuggets )
Wash and wipe with a cloth so no water remains ( this is a important step )
Now in a flat thaal or plate mix together , salt , juice of 1 lime , 1/4th tsp cinnamon powder, 2 tsp garlic powder , 2 tsp red chilli powder, 1 tsp red chilli flakes , 1 tsp white pepper powder , 3 tbsp siracha sauce or red chilli sauce , 1 tbsp green chilli sauce . Mix everything well and apply on fish with very light hands . And let marinate in the fridge for an hour.
In a big bowl mix together 3/4th cup maida , 1/4th cup corn flour, salt , half tsp red chilli powder , half tsp haldi, half tsp white pepper powder , 1/4th tsp baking powder , 1 tsp red chilli flakes and enough cold milk and water to make a medium consistency batter ( should be enough thick to just give a thin coating on the fish , if its too thick it will make a very fat coating that wont taste good , if its too thin then it wont hold on the fish )
Coat each pc of fish with dry maida , then dip in the batter , and finally coat with fresh bread crumbs or panko and deep fry on medium heat till golden and crisp.
In a bowl mix together, half small finely chopped onion , 8 tbsp mayo with 4 tbsp yogurt , 4 tbsp cream , little salt , 1 tsp garlic powder, 1 tsp vinager , 4-5 chopped olives , a tbsp chopped pickled jalapeno , 1 chopped pickled gherkin ( if u dont have gherkin then simply boil cucumber with little water , vinager and salt and use ) ( if u have a chopper , just chopperise the onion, olives and jalapeno and gherkin together) mix everything well , and add little water to adjust consistency( it shoud be a smooth sauce , not very thick or very thin )
Grill burger buns slightly with little butter and keep a fish fillet on top , followed by the sauce and iceberg lettuce. Serve hot as it is or with ketchup.
