Street Style Choora Wada Pav (Kirti College Style)
Do u love street style wada pav , and would love to make it in the comfort of ur home with complete hygiene. This recipe is a perfect one for u.
If u have green and imli chutney at home u can use that . If not u can make this instant mix chutney which tastes tooo good.
For chutney grind together, a fist of coriander , 4-5 green chillies , 4-5 cloves of garlic, 1 tsp zeera powder , around 2 tbsp imli , around 4 tbsp chopped gudh, 2-3 dates, 1 tsp red chilli powder, 1 tsp chaat masala powder and salt . Grind to a fine paste and dilute with water if needed.
For wada boil 500 gms of potato and mash and keep aside .
In a grinder , dry grind 5-6 cloves of garlic, 1 inch ginger sliced , 2-3 green chillies to a rough paste. Add v little water if ur not able to grind.
In a kadhai heat oil , add 1 tsp rai , lots of curry leaves , half tsp hing, and the prepared masala paste. Saute really well and add 1 tsp haldi and salt , mix well and add the mashed potatoes and cook for 2-3 mins . Finally mix lots of chopped coriander and switch off heat. Once cool shape flat wadas and keep aside.
For the batter mix 1 cup chana aata , 2 tbsp rice flour salt and add water little at a time and keep mixing with ur hands till u have a perfect consistency , not too thin , not too thick . Its imp to mix well with ur hands for long . No soda is used in this .
Now heat oil well and dip each wada in the batter and deep fry till golden . To fry the choora take a handful of batter and sprinkle into hot oil to make boondi like choora. Fry till golden and crisp and keep aside.
Now cut open a pav and generously or lightly as per your taste ,spread the chutney , sprinkle ghaati masala ( ive used ready made u can follow my recipe for instant ghati masala #naziafarhanextras) put a vada in between and sprinkle extra ghati masala if u love spicy and generously put some crisp choora. Serve immediately.
