Dhaba Dryfruit chicken

So guys this is one of the most orderd at dhabas and the only difference in dish from different dhabas is just different food colors, some use red , some green , some yellow and some dont add any food colour. So u can follow the same recipe and use or skip food colour according to your preference. Also dhabas use ajinomotto , i have skipped it

Marinate 500 gms of boneless chicken cubes, with salt , 1 tsp white pepper powder  , 1 egg , 2 tbsp maida , 2 tbsp cornflour , 1 tbsp red chilli sauce and a pinch of food colour.
Let marinate for an hour and deep fry till golden .

In a wok heat some butter and oil, add 2 tbsp chopped garlic , 1 tsp chopped ginger , 3 chopped green chillies and saute for around 30 sec . Add a handful of broken kaju and fry till light golden , add 3 tbsp green chilli sauce , 2 tbsp red chilli sauce , 1 tsp soya sauce , 1 tsp vinegar , salt , 1 tsp sugar , 1 tsp white pepper powder  and pinch of food colour . Mix well and add slurry of half cup water and 1 tsp corn flour . Mix well and add the fried chicken , cover and cook till dry , keep stirring in between . Lastly mix some chopped spring onion and serve hot , as it is like a starter or along with tandoori roti or naan.
