Instant Jelebi
Such a quick and easy recipe , your Jelebi will be ready in minutes.
All u have to do is firstly cook 1 cup sugar and 1 cup water with a pinch of saffron ( you can even add elaichi powder if u like) cook for 5 mins till slightly thick and switch off heat .
Now mix together half cup Maida, 1 tbsp corn flour, half tsp ghee , half tsp baking powder ( not soda) , a pinch of yellow or orange color and enough water to make a thick paste . Whisk for a good 5 minutes to get perfect batter. Fill in a piping bag and cut the point accordingly for desired thickness ( I like thin jelebis) and fry in a mix of oil and ghee at medium heat till golden
The trick is to keep your hand as low as you can and go slow ( it was difficult for me to shoot and cook simultaneously without a stand , it’s v easy and Ull get a hang after 2-3 attempts)
Once golden , dip in warm sugar syrup for 30 seconds and remove in a plate . Serve hot as it is or with instant rabdi that is part of my Malpua recipe.
