Italian Biryani
I have recieved sooo many requests on this one . Finally im up with the recipe for u guys. Ive used green colour in the rice and as bhatyaras do that. U can skip if u wish . To be honest theres nothing Italian about Italian biryani , i have tried to recreate what the bhatyaras make , hope u like it.
Firstly grind together 1 tbsp garlic paste, half tbsp ginger paste , a fist of coriander , a few leaves of mint , 2 dices of capsicum, juice of 1 lime, 1 tsp kasoori methi and salt to a fine paste . Apply on 750 gms of chicken along with 4 tbsp dahi. Let marinate for half hour and cook till done in a kadhai. Lift each pc of chicken and give it a charred effect by roasting on direct flame.
For the gravy , blend together , 4 tbsp kaju , 2 tbsp 4magaz , 2 onions , 200 gms dahi , 2 tbsp coconut milk powder, half a bundle of coriander leaves , 1 fist of mint leaves, 1 tbsp garlic paste , half tsp ginger paste , 1 tbsp kasoori methi , 6-8 green chilies and half capsicum to a fine paste.
In a vessel heat oil and add whole garam masala , the prepared paste , and saute well , add salt , 1 tsp garam masala powder , 1 tsp dhanya powder , half tsp haldi powder , 1 tsp zeera powder , half tsp black pepper powder and saute more , add the cooked chicken pcs and 1 cup water. Cook for 5 mins more , finally add 6tbsp cream and 4 tbsp mayonnaise and green colour. Cook for 2 mins and switch off heat. Give coal dhungaar.
Boil 2 cups of soaked basmati rice with whole garam masala , salt and little green colour , just to give a light shade. Strain and keep aside .
In a big vessel put a thin layer of rice , followed by the green chicken gravy . And the remaining rice . Sprinkle some green colour , some chopped coriander and drizzle some ghee . Cover and cook on high heat for 10 mins and put on dum on low heat for half hour. Serve hot.
