Nachos with Salsa and Cheese Sauce
A super delicious snack , specially during movie time , and during monsoon .
For nachos… knead 1 cup makai aata ( its a yellow flour known as corn meal , corn flour is different and makai aata is different) along with half cup maida aata , salt , 1 tbsp @safoods_aisha oregano sprinkle ( if you dont have use 1 tsp oregano , half tsp mox herbs and half tsp garlic powder) , half tbsp red chilli flakes , 2 pinch ajwain , and knead to a soft dough. Keep aside for half hour , roll into thin rotis with little maida and poke all over with a fork. Cut into triangles and deep fry on medium low heat till golden and crisp . ( you can let these cool and fill in a big jar and keep for 3-4 days , you can also toss some cheese powder or peri peri masala on it )
For salsa , in a kadhai heat 2 tbsp olive oil, add 1 chopped onion , 1 chopped tomato and 1 chopped capsicum , cook for 2 mins and add 2 tbsp red chilli sauce , half cup tomato ketchup , 1 tsp red chilli flakes , salt , half tsbp sugar and cook well for 5 mins .
For cheese sauce , heat 2 tbsp butter in a vessel, add half tbsp maida aata and saute , add 1 cup milk , pinch of haldi , 1 tsp sa foods oregano sprinkle ( or half tsp oregano , half tsp mix herb and a pinch of garlic powder) cook for 2 mins add little salt , 1 cup grated processed cheese and cook well till melted .
To serve in a plate spread some nachos followed by salsa and cheese sauce , lastly sprinkle some olives , jalapenos and chopped capsicum. Serve immediately.
