Makhni

Another of my fave in restaurants . And one of the most requested recipes.
In a bowl soak half cup whole black urad , 1 handfull whole masoor , 1 handfull rajma , 2 tbsp toor dal . Soak overnight.
Pressure cook the dals along with whole garam masala and salt. At high heat till first whistle then low heat for 7-8 mins.slightly mash and Keep aside.

In a vessel heat oil , add 1 tsp zeera , 1 tbsp ginger garlic paste , 2 green chillies chopped and saute well , add 1 big chopped onion and saute till golden , add paste of 3 tomatoes and saute well , add salt , 2 tsp red chilli powder , half tsp haldi , 1 tsp dhanya , half tsp zeera powder , half tsp garam masala powder . Cook well till oil comes up . Add the cooked dals , and cover and cook for 10 mins . Lastly mix in 3 tbsp butter , half cup cream or malai , lots of chopped coriander , 1 tbsp kasoori methi , cook for 2 mins and serve hot with zeera rice of some butter garlic naan or tandoori roti.
