Veggie Lollipop
These are actually shaped like balls but the name lollipop is coz each ball is presented with a toothpick . You can skip the presentation.
In a grinder , grind 6-8 slices of bread ( 2 at a time) into rough fresh bread cumbs , mix 1 tbsp maida , 1 tbsp cornflour , 1 tsp garlic powder, 1 tsp oregano and 1 tsp chilli flakes . Mix and keep aside .
In a kadhai heat 4 tbsp butter , 6 tbsp oil , add half cup maida and saute till slightly fragrant . Add 1.5 cup milk and 1 cup water . Stir well so no lumps are formed . Cook well till it leaves sides a and forms into a dough like ball. Let cool.
Into this mix in 1 small chopped capcicum , 1 small grated carrot , a handful of chopped spring onion , lots of chopped coriander , half cup boiled corn , 3 medium sized boiled and mashed potatoes, 100 gm paneer , 100 gm cheese , salt , half tsp black pepper powder and 3-4 green chillies chopped , mix well and make small balls . Dip each ball in a thin mix of maida aata and water , coat with the bread crumb mix and fry just 4 pcs at a time on high heat till golden . Prick toothpick and serve hot with ketchup or green chutney.
