Khaajli Puri

These can be enjoyed at tea time or along with some kneer .

For the dough … knead together 250 gm maida with 2 tbsp rava , pinch of salt , 4 tbsp oil or ghee . Crumble well and knead to medium soft dough with water . Cover and keep aside for half hour.

Roll 5-6 thin rotis and keep aside . Now stack each roti on top of each other , sprinkle cornflour between each and seal edges with little water… roll again a little with help of corn flour. Now roll this stack into a swiss roll shape . Slice into rounds . Roll each round with light hands to a thick puri. Deep fry till golden and crisp .. ps keep pressing and splashing oil while frying these to get perfect texture . You can store these in a jar for about a week.
