Loaded Chicken Pretzels

Really happy that u guys have loved the pretzel recipe i posted previously . Many had requested for the way of folding.. so today i have made a loaded version . Loaded with herbs sauces and veggies and grilled chicken . For the dough …. knead together 2 cups maida , 1 tbsp yeast , 1 tbsp sugar and salt to taste with lukewarm water. Lastly apply 2 tbsp olive oil. Cover and keep aside till 2 hrs or till double.

For the soda bath … in a big bowl mix 4-5 cups of water and 2 tsp baking soda .

For the grilled chicken …. marinate 500 gm chicken sliced to thin slabs with … 1 tbsp chopped garlic , 1 tsp oregano, 1 tsp chilli flakes , half tsp mixed herbs , half tsp white pepper ,2 tbsp red chilli sauce , little chopped corriander and 1 tbsp butter. Marinate for half hour. Grill in a pan . Cut into slices and keep aside.

For veggie mix … in a bowl mix half cup each of red , yellow n green capcicum, iceberg lettuce , onion and tomatoes chopped . Mix 4 tbsp tomato ketchup , salt , half tsp white pepper powder, 2 tbsp red chilli sauce, half tap oregano , half tsp chilli flakes and half tsp mix herbs . Mix and keep aside.

For assembling…. on a table roll a big ball of dough with help of some flour into a big rectangle. Place the veggie mix in a line followed by sliced chicken in the centre , add lots of mayonnaise on top of the chicken , finally add some grated cheeze and sprinkle little oregano and chilli flake.
First fold from the sides and then roll from the front into a big roll.
Now carefully lift the roll and dip in the soda bath for about 30 seconds. Remove and put on a greased baking tray. Make light slits on top of the roll and sprinkle white til , bake in a preheated oven till golden.
Cut into 3-4 pcs and serve hottt.
